אָמָּנוּת או אֳמָנוּת (יש לקרוא: אוֹמָּנוּת, להבדיל מאֻמָּנוּת - אומנות) הוא שם כולל לפעילויות האנושיות שאינן נעשות על פי תבנית פעולה קבועה, מחייבת ומוגדרת מראש, אלא נתונה לשיקול דעתו, פרשנותו ויצירתיותו של האמן (אָמָּן או אֳמָן, יש לקרוא: אוֹמָן), ומתבססת על כשרונו המיוחד. עם זאת, יכולה להעשות (ולמעשה אכן נעשית) על פי כללים ובמגבלות (לעתים חמורים), שבמסגרתם מתבטא חופש היצירה של האמן. בתחום האמנות נכללים ענפים רבים ומגוונים, ובשל כך האמנות תופסת מעמד מרכזי בתרבות האנושית. האמנות קשורה בטבורה עם האסתטיקה.
